Buffet Potatoes

These are soooo good. And you can add meat and have them as a main dish, or leave it out and serve them as a side dish.
You will need:
  • 2 lb. bag of frozen chuncky hash browns
  • 1 can Cream of Chicken soup
  • 8 oz 1/2 fat sour cream
  • 8 oz shredded Sharp Cheddar

Optional Ingredients: 1 chopped onion or scallion, chopped ham, cooked breakfast sausage, sliced pepperoni, or hamburger.

Combine all ingredients, hash browns should still be frozen, in a large mixing bowl. Reserve 1C of chese to sprinkle on top.

Turn mixture into a greased 13 x 9 baking dish. Sprinkle with reserved cheese.

Bake @ 375 for 45 minutes or until golden brown and bubbly.

Everytime I take this dish to a pot luck dinner, I never get seconds b/c it all gets taken during the first trip through the serving line.
